I feel horribly stupid asking this, but where to I open AppleScript Studio? I've installed the Developer's Tools, and can see the folder, but I don't see AppleScript Studio anywhere. I know this is really dumb, but I'm new to OS X, so please be kind to me

Open ProjectBuilder in /Developper/Applications, then in the File menu, choose New Project, click on AppleScript Application or AppleScript Document-Based Application in the window which opens, then click on next at the bottom of the window.
Enter the name of your Project and choose the location, click on Finish and that is all. You'll have a skeleton to build any AppleScript Application with a Gui, Script, dictionary, etc... |
